Que os galegos e os bretóns comparten moitos aspectos culturais xa é de todos coñecido, e no aspecto gastronómico non ía ser menos. As galettes da Bretaña son moi semellantes ás nosas filloas, mais o ingrediente principal ven sendo o trigo sarraceno, tamén chamado trigo mouro ou trigo negro. Aínda que se considera un cereal, non o é exactamente, pois non pertence á familia das gramíneas. Os grans teñen unha forma triangular, unha cor escura e o seu sabor é intenso. En Catalunya, empregan o trigo mouro para facer unha especie de papas chamadas farinetes. As galettes están moi boas e, como as nosas filloas, pódense degustar con case calquera recheo. Imos aló!

Ingredientes:

– 300 gramos de fariña de trigo sarraceno
– 800 ml de auga fría
– 10 gramos de sal
– 1 ovo

Recheo (opcional):

– pavo ou xamón
– queixo
– rúcola
– ovo fritido

Preparación paso a paso:

1. Mesturamos tódolos ingredientes e deixamos que a mestura repouse durante unha hora na neveira.

2. Engraxamos unha tixola con manteiga e botamos a masa ata que cubra toda a base da tixola, sen quedar moi grosa. A temperatura terá que ser un chisco alta. Para saber se a temperatura está no seu punto, só teremos que fixarnos en se a masa abre buratiños, como se pode ver na imaxe.

3. Unha vez que temos a galette preparada. Engadimos o pavo, o queixo, a rúcola e o ovo fritido.

4. Pechamos a galette dobrando as catro beiras cada adentro, dándolle forma de cadrado e listo!

Xa vedes que doada é esta receita! O recheo pode variar segundo o que máis vos guste. O recheo máis típico soe levar ovo, xamón e queixo, e o ovo faise na tixola enriba da galette. Tanto se vos gustan as filloas como se non, tedes que probar esta versión bretona; o trigo de sarraceno dálle un sabor ben diferente e intenso e con este recheo a verdade é que están ben boas 😛
Ah! E con nutella, nocilla ou crema de cacao caseira están de vicio!!!

Galician and Breton people share some aspects of their cultural heritage, and this can also be applied to gastronomy. Breton galettes look a lot like Galician filloas; however, the main difference lies on the fact that galettes are made with buckwheat, also known as silverhull buckwheat or Japanese buckwheat. In spite of its name, it’s not related to wheat and it’s considered to be a pseudocereal. Its grains have a triangular shape, a dark colour and an intense flavour. In Catalonia, buckwheat is used to prepare something similar to porridge, called farinetes. Galettes are veeery tasty and, as happens with our filloas, they can be filled up with almost everything we can think of, so let’s go!

Ingredients:

– 300 gr buckwheat flour
– 800 ml cold water
– 10 gr salt
– 1 egg

Filling (optional):

– boiled turkey or ham
– cheese
– rocket sald
– fried egg

Step by step preparation:

1. Mix all ingredients and let the batter settle for around an hour in the fridge.

2. Butter a frying pan, add enough batter to cover the whole pan trying not to make the galette too thick. To know if the pan temperature is right, we have to see how the galette makes little holes, as you can see in the picture. It’s usually a pretty high temperature.

3. Once the galette is ready, add the turkey, cheese, rocket salad and the fried egg.

4. Close the galette by folding each side, giving it a square shape, and that’s it!

Simple and quick, right? And as soon as you try it, you will say tasty as well. The most typical filling is that with egg, boiled ham and cheese, and the egg will be fried on top of the galette. Either if you like Galician filloas or not, you have to try this Breton version. Buckwheat gives a really special and different flavour to galettes and the if you try them with this filling, you’re gonna love them! 😛
Oh! And if you try them with some homemade nutella, they’re delicious!!!
