Bica branca de Laza

Seguimos coas lambetadas de Entroido. A bica é un doce típico de varias zonas da Galiza, sendo as máis coñecidas, a de Laza, a de Trives e a de Castro Caldelas. Desta vez, faremos a Bica branca de Laza, por ser este un dos lugares máxicos do Entroido. Ademáis, a receita é moi sinxela de facer, e o resultado, encantaravos! Imos aló!

Ingredientes:

– 9 claras de ovo
– 430 gramos de azucre
– 360 gramos de fariña
– 350 gramos de crema para montar
– azucre para esparexer

Preparación paso a paso:

1. Comezamos por subir a crema co batedor de varillas. Reservamos.

2. Subimos as claras a punto de neve, engadimos o azucre, e seguimos batendo ata que teña unha textura consistente.

3. Engadimos pouco a pouco a fariña, procurando non bater en exceso, para que non se baixen as claras.

4. Mesturamos cunha culler a mestura de claras coa crema subida, removendo con movementos envolventes. Quedaravos unha mestura moi moi cremosiña.

5. Nun molde rectangular, forrado con papel vexetal, vertemos a masa, e cunha culler, repartirémola por todo o molde. E esparexemos azucre por riba. (Importante! Non vos esquezades do azucre, que é o que lle dá o toque especial á bica. E se vos gusta a canela, tamén lla podedes botar)

6. Deixaremos a bica no forno a unha temperatura de 180°C durante uns 40 minutos ou ata que un escarvadentes cravado no centro saia limpo.

7. Sacarémola do molde e deixarémola arrefriar enriba da grella do forno. (Eu xa tiven que meterlle o dente antes de que arrefriara…mmm…que pinta!)

Laza’s white Bica

Another Galician Carnival delicious dessert! Bica is a well-known dish in many parts of Galiza, especially famous are those from Laza, Trives and Castro Caldelas. Today’s recipe will be Laza’s white Bica, being Laza one of those magical places you’d love to go and enjoy Carnival. So, if you do not have the opportunity of going there, try this tasty Bica that will make your mouth water! Let’s go!

Ingredients:

– 9 egg whites
– 430 gr sugar
– 360 gr flour
– 350 gr whipping cream
– some extra sugar

Step by step preparation:

1. Whip the cream until fully consistent. Keep for later.

2. Beat the egg whites together with the sugar until it forms stiff peaks.

3. Add the flour gradually to prevent the egg whites from becoming liquid.

4. Mix the egg whites mixture and the whipping cream with a tablespoon until fully integrated. The batter will be very very creamy.

5. In a rectangular baking mould, covered by a baking paper, pour over the batter and spread it with a spoon. And add some sugar all over the top. (Important! Don’t forget the sugar on top, as it is a key ingredient. If you like cinnamon, you may spread some as well)

6. Bake it for around 40 minutes at 180°C / 350°F or until a toothpick inserted in the centre comes out clean.

7. When ready, take it out of the mould and let it cool over a wire rack. (I had to try it before it was completely cold, because I couldn’t resist it!)

Carnival in Galiza is a reeeally nice time, and with all these delicious recipes, it turns out to be even better!
