Falafel ao curry

Despois dun primeiro intento un tanto fallido, comecei unha busca intensiva de receitas de falafel para poder discurrir unha que fose sinxela, saborosa e efectiva. E durante esa investigación, decateime do fallo inicial da miña receita, que era, nada máis e nada menos, que cocer os garavanzos. Como? Que non se cocen os garavanzos? Sí, iso mesmo pensei eu. Pero o certo é que na receita orixinal os garavanzos non se cocen, só se poñen a remollo. E funciona, si,si, e tanto que funciona! Imos aló!

Ingredientes para uns 25 falafels:

– 200 gr garavanzos
– 2 chalotas
– 1/2 cebola
– 1 allo
– curry (ao gusto)
– especias varias (o común é empregar comiño, perixel e cilantro) Eu empreguei un sazonador de carne que leva: pementón doce, cebola, segorella, fiúncho, canela, xebra(mostaza), cúrcuma, allo e loureiro. E un chisco de perixel.
– sal
– pan relado (se é preciso)

*Tanto a cantidade de especias, como de allo, de cebola, de chalotas ou de curry dependerá de como vos gusten máis os falafel. Non haberá ningún problema por aumentar, diminuir ou cambiar estes ingredientes.

Preparación paso a paso:

1. Deixar os garavanzos a remollo o día anterior.

2. Ao día seguinte, lavaremos os garavanzos e deixarémolos escorrer para que non teñan auga.

3. A continuación, picarémolos coa picadora, xunto coa cebola, o allo, as chalotas e algunha especia. Haberá que picar de poucos en poucos e varias veces ata que quede ben picadiño. Tamén se pode bater coa batedora.

4. Unha vez que a masa de garavanzos estea ben finiña, poñerémola nun prato ou nun bol. Engadirémoslle o sal, o curry e tódalas especias que lle queirades engadir. E deixarémola repousar durante unha media hora.

5. Cando xa teña pasado o tempo, tentaremos facer boliñas coa masa. Se vedes que está moi líquida, podedes engadirlle pan relado. [Eu engadinlle unhas 4 culleradas porque semellaba que estaba moi húmido. Como seguía vendo que as boliñas se formaban ben, pero que seguía estando húmida, decidín fritir unha e vin que non se desfacía nada no aceite, así que tede en conta que a masa sempre estará algo húmida, pero se sodes quen de formar o falafel, quererá dicir que a masa está lista. Agora ben, se vedes que se vos desfai, non dubidedes en engadirlle pan relado].

6. Fritimos os falafel (sen rebozar!) e listo!

Curry falafel

After a first try doing falafel, I started to look for different recipes to get to make my own easiest and tastiest recipe! And, during this investigation, I realised which my mistake was: to boil the chickpeas! Wrong option, dear! The truth is that, according to the original recipes, you do not need to boil them first, just leave them in water overnight. And it actually works! So let’s see how to do them! Let’s go!

Ingredients:

– 200 gr chickpeas / garbanzo beans
– 2 shallots
– 1/2 onion
– 1 garlic
– curry (at your choice)
– different spices (usually: parsley, coriander and cumin) I used these ones (from a mixture to season meat): paprika, onion, winter savory, garlic, fennel, cinnamon, mustard, curcuma and bay tree (laurel).
– salt
– breadcrumbs (if needed)

*The quantity of spices as well as those of garlics, shallots, onions or curry will depend on your preferences. So, if you need to change any of this, the recipe will be great as well.

Step by step preparation:

1. Leave the chickpeas in water overnight.

2. The following day, wash them and strain them.

3. Then, process them in a food processor, together with the onion, the garlic and the shallots. You’ll have to do it bit by bit, and in several times for it to get really smooth.

4. Once the chickpeas are ready, put them in a bowl and add the spices and the salt until you get the desired flavour. Let it settle for 30 minutes.

5. Then, try to form the falafel. If it’s too liquid, add some breadcrumbs. [I added 4 tablespoons of breadcrumbs, because it looked like being too humid. But after these 4 tablespoons, I found it was still humid, so I decided to fry them and see how they worked. As they worked well, I did not add more breadcrumbs. But take into account that this paste is humid, so if you’re able to form the falafel easily, you won’t need to add breadcrumbs].

6. Fry the falafels (without coating!) until brown, and that’s it!

As you can see, the recipe is very easy, and if you make it, you’ll find it delicious as well! 😉
