Alfajoriños / Little Alfajores

image

6. Pasados os 30 minutos, estiramos a masa co rolo.

image

9. Despois, déixaas arrefriar na grella do forno.

image

11. Rela o chocolate branco e pasa as beiras do alfajor polo chocolate.

Little Alfajores

image

I must tell you a secret… I’m addicted to dulce de leche! (It is so good it does not have an exact translation 😉 It would be some sort of milk jam, but better!) I like dulce de leche with lots of things, cookies, ice creams, crepes… and, of course, alfajores! As I’m not a huge coconut fan, I change it for grated white chocolate and I must confess it ended up reeeally tasty! 🙂 Let’s see how we do it!

Ingredients:

image

– 125 gr butter
– 75 gr sugar
– 1 egg
– 1 tablespoon vanilla essence
– 100 gr cake flour
– 150 gr cornflour
– 8 gr baking powder
– 1 teaspoon baking soda
– 1 jar of dulce de leche
– 1 white chocolate bar

Utensils: a bowl, a sieve, a whisk, plastic wrap, a rolling pin and baking sheets.
Preparation time: 20 minutes
Baking time: around 8 minutes
Difficulty: easy

Steps to prepare this yummy dessert:

1. Beat the butter together with the sugar until soft.

2. Add the vanilla and the egg, and beat again.

image

3. Sift the flours, the baking soda and the baking powder and add it to the mixture.

image

4. Now it’s time to work with our hands! Mix all the ingredients.

5. Put the dough in a plastic wrap and keep it in the fridge for half an hour.

image

6. Then, roll the dough using a rolling pin. (Kukitip: if you don’t have a rolling pin, use a bottle! The result is the same!)

7. Cut the dough with a round cookie-cutter, a bottle cap, or anything that just can make a round shape. I did it with a Cacaolat cap, and that made 60 round shapes – 30 alfajores – of 4.5 cm each.

image

8. Put these rounds on a baking sheet and put them in the oven for around 8 minutes or until the edges look slightly brown, but don’t bake them a lot, both sides should look white.

image

9. Then, let them cool over the wire rack.

image

10. Time to fill them with the dulce de leche! Take one circle, add some dulce and stick to the other one. Put some more around the edges.

11. Grate the white chocolate and put it over the edges of the alfajor.

image

12. Put them on a dish or tray but watch out! cause as you’re putting in there, they will be disappearing! 😛
