A primeira vez que probei a brandada de bacallau foi nun canelón feito con masa de filloa (xa vos deixo aquí a idea por se queredes probar)e estaba moi, moi, moi boa. O que non sabía é que a brandada era tan sinxela e rápida de facer. E sobre todo, que así, soa, sen filloa nin canelón nin nada, estaba tan boa como está. Os ingredientes son moi básicos e o paso a paso moi doado. Imos aló!

Ingredientes para 4 persoas:

– uns 350 gramos de bacallau desalgado
– 2 patacas grandiñas
– loureiro
– 100 ml de leite
– 150 ml de aceite de oliva
– 2 ou 3 allos
– queixo relado
– pan

Preparación paso a paso:

1. Poñemos o bacallau en auga e en canto rompa a ferver, apagamos o lume e deixamos que repouse un par de minutos.

2. Sacámolo da auga, agardamos a que arrefríe un pouco e esmigallámolo, procurando que quede sen espiñas.

3. Cocemos as patacas na auga onde fervemos o bacallau ata que estean ben brandiñas.

4. Confitamos os allos cortados en anacos. E como facemos isto? Fritímolos en aceite moi pouco quente para que o aceite colla o sabor do allo. Para que vos fagades unha idea, na cociña de inducción que vai do 1 ao 9, para confitalos chegaría con poñela no 3. Uns minutiños chegarán para que o aceite colla sabor.

5. Quentamos un chisco os 100 ml de leite e batemos o bacallau desmigallado, as patacas cocidas en anacos e o leite ata que vaia tendo unha textura de crema ou puré.

6. A continuación, imos engandindo o aceite aromatizado cos allos (sen os allos) e seguimos batendo sen parar ata que estea todo moi ben mesturado.

7. Poñemos esta mestura nuns moldes para forno, esparexemos queixo relado por riba e metémolos no forno co grill a uns 200 graos ata que o queixo quede torradiño.

8. Torramos ou fritimos un pouco de pan para acompañar e listo!

Xa vedes que non ten ningunha dificultade e o pan torrado quédalle de vicio, sobre todo para aproveitar ben o que queda no molde! 😀 Se vos gusta o bacallau, aquí vos deixo outra receita coa que quedaredes moi ben e que está saborosísima!!!

The first time I’ve tried cod brandade it was in a restaurant in which they had it as some sort of crepe-made cannelloni (you can try it like this as well) and it was really delicious. What I didn’t know at the time was that cod brandade was so simple and quick to make. The best thing is that its ingredients are very basic and easy to find and the step by step incredibly easy, so let’s go!

Ingredients for 4 people:

– around 350 gr desalted cod
– 2 big potatoes
– laurel
– 100 ml milk
– 150 ml olive oil
– 2 or 3 garlic cloves
– grated cheese
– some bread

Step by step preparation:

1. In a pot, put the cod and some laurel and cover it with water. Bring to the boil and then let it settle in the water for a couple of minutes.

2. Take the cod out of the water, let it cool for a while and then crumble it, trying to take all bones out.

3. Boil potatoes in the water we used to boil cod and cook until soft.

4. Now we’re going to deep “fry” the chopped garlic cloves at a very low temperature, for the oil to get a slight garlic flavour. We don’t want to “fry” the cloves, so if we are using an induction stove and the temperature range goes from 1 to 9, a 3 would be more than enough. A couple of minutes will be enough for the oil to be ready.

5. Heat up the milk and then beat the boiled potatoes, the cod and the milk together until smooth and creamy.

6. Then, add garlic oil (withou the garlic cloves)bit by bit while beating until everything is well integrated and it looks like a smooth purée.

7. Put brandade inside the baking moulds, top with some grated cheese and grill at around 200ºC/400ºF until it’s golden brown on top.

8. Toast or fry some bread to spread brandade on it and that’s it!

As you can see, it’s veeery easy and if you spread some on the toasted bread, you’re going to fall for it! Either if you like or you don’t like cod, you’re going to love this recipe as soon as you prepare it because it’s amazing and full of flavour!!!
