Biscoito de pexegos

Unha das cousas que máis me gusta do verán é ir á horta de meus pais e ver como as árbores están cheas de froitos: mazás, pexegos, ameixos, claudias, peras… É unha marabilla! Coller os froitos directamente da árbore e comelos é un deses tan esquecidos pequenos praceres da vida! Este ano, non sei se pola calor, o pexegueiro está a tope de pexegos que xa están no seu punto. E cando veñen tantos á vez, non se me ocorre outra cousa que facer unha larpeirada con eles, como non podía ser doutra maneira! Esta é ben sinxela e non se precisan moitos ingredientes. O resultado, xa o vedes, incrible! A pinta é boa, mais o sabor aínda é mellor! Imos aló!

Ingredientes:

– 2 ovos
– 100 gramos de azucre
– 1 iogur natural
– 200 gramos de fariña
– 1 sobriño de fermento químico
– 500 gramos de pexegos xa cortados en anacos
– azucre moreno

Pexeguiños fermosos:

Preparación paso a paso:

1. Batemos os ovos e o azucre, e engadimos o iogur.

2. Despois, botamos a fariña e o fermento químico e mesturamos.

3. Cortamos os pexegos en cadradiños e mesturámolos coa masa. Deixamos uns poucos para botar por riba.

4. Vertemos a masa nun molde engraxado e botamos o resto dos pexegos cun pouco de azucre moreno, para que quede crocante.

5. Enfornamos a 180°C durante uns 40 minutos ou ata que estea ben sequiño cando o piquemos. E listo!

Quedará máis torradiño do habitual por riba polo azucre moreno, polo que non vos fiedes da pinta que ten e picádeo ben polo medio, pois o pexego tamén lle aporta humidade. Sempre fixera esta receita con mazás, que foi como ma deron, mais como tiñamos tantos pexegos, mudei de froita e non podo estar máis contenta co resultado! O biscoito queda crocante por riba, e húmido e esponxoso por dentro. Os pexegos danlle un toque doce que lle queda espectacular. Se o voso pexegueiro está coma o noso, aproveitade e preparade esta marabilla!

Peach cake

One of the things I love about summer is coming to my parents’ garden and walk all around it while I look at the fruit growing in the trees: apples, peaches, plums, pears… So beautiful! Picking them up and eating them right away is one of the biggest pleasures in the world! This year, I don’t know if as a consequence of the heat wave, the peach tree is absolutely full of peaches! And when you have so many coming at the same time, it’s time to think of a sweet treat, doesn’t it? This recipe is really simple and the ingredients easy to find. The result, as you can see, amazing! It looks delicious, and it tastes even better!!!

Ingredients:

– 2 eggs
– 100 gr caster sugar
– 1 plain yogurt
– 200 gr plain flour
– 1 sachet baking powder
– 500 gr chopped peaches
– brown sugar

Beautiful peaches:

Step by step preparation:

1. Beat eggs and sugar, and then add yogurt.

2. Then, whisk in flour and baking powder.

3. Chop peaches and mix them with the cake batter. Leave some to top the cake later.

4. Pour the batter over the a greased baking mould and top with the rest of the peaches and some brown sugar.

5. Bake at 180ºC/350ºF for around 40 minutes or until the toothpick inserted in the middle comes out clean. And that’s it!

As we have spread some brown sugar on top, this cake will get a crunchier and darker top surface, so be sure it’s fully cooked. I’ve always prepared this recipe with apples because that’s the original recipe I was given, but having so many peaches, I decided to switch the fruit and I cannot be happier with the flavour and the texture! If you have a so generous peach tree as mine, give this cake a chance and you will definitely repeat! Enjoy!!!
