Aínda que xa estamos recollendo as últimas berenxenas da horta, este ano non nos podemos queixar, pois aínda che duraron ben. A min encántanme, e como proba, non se precisa máis que unha ollada rápida aos milleiros de receitas de berenxenas que hai no blogue. Desta vez, uns canelóns ben rápidos e sinxelos, que ademais campan que rabean e saben de medo! Non é preciso nin gratinalos nin levalos ao forno! Iso si, se lles queredes engadir queixo relado e poñelo a dourar, de seguro que o agradece 😉 Imos aló!

Ingredientes para 2 persoas:

– 1 berenxena xeitosa ou 2 pequenas
– 1 cebola
– 1/2 pemento vermello
– 1 ou 2 latas de atún
– prebe de tomate
– bechamel (manteiga ou aceite, fariña e leite)
– noz moscada ou especias para o bechamel

Preparación paso a paso:

1. Cortamos a berenxena en láminas finas e dorámolas nunha tixola cun chisquiño de aceite ben quente.

2. A continuación, fritimos a cebola e o pemento cortado ben pequeniño.

3. Cando estean xa ben pasados, engadimos o atún e mailo prebe de tomate.

4. Preparamos o bechamel co aceite, a fariña e o leite. Recordade que é importante fritir (sen que se chegue a queimar) a fariña para que o bechamel non saiba a fariña. Probamos e salgamos. Engadimos noz moscada, ourego ou a vosa especia favorita.

5. Botamos o recheo de atún na punta dunha lámina de berenxena e enrolamos ata pechar o canelón.

6. Botamos o bechamel ben quentiño por riba e listo para degustar!

Se o recheo e o bechamel están recén feitos, non precisamos quentalos no forno porque estarán no seu punto de temperatura. Se queredes preparalos para servilos despois, pódense deixar preparados e darlles un toque de calor no forno durante uns minutiños. O recheo xa sabedes que podedes varialo segundo os ingredientes que máis vos gusten ou teñades a man. Unhas verduriñas, queixo ricotta con espinacas, soia texturizada, cogomelos, castañas…esta receita queda ben con todo! Como sempre vos digo, imaxinación ao poder! E bo proveito!

Aubergine rolls

Though we’re getting now the last homegrown aubergines, the truth is that this year we should be more than happy with the aubergine harvest 😉 I love every recipe made with this veggie, and if you don’t believe, just have a look at the many recipes posted in the blog! These rolls are quick, easy, flavourful and they look so good and yummy!!! You don’t need to cook them in the oven, but if you are a cheese lover, you can of course top them with some cheese and grate them for some minutes until cheese gets that beautiful and bright colour! No more talking and let’s go!

Ingredient for 2:

– 1 beautiful aubergine or 2 small ones
– 1 onion
– 1/2 red bell pepper
– 1 or 2 tins tuna
– marinara sauce
– white sauce (butter or oil, flour and milk)
– ground nutmeg, oregano or any other spice you may add to the white sauce

Step by step preparation

1. Cut aubergine into slices and cook in a saucepan with some oil until golden brown.

2. Then, fry finely chopped onion and pepper.

3. Add tuna and marinara sauce and cook for a while.

4. Prepare the white sauce and remember it’s important to cook the flour for a while so the white sauce won’t have a flour-y flavour. Taste and salt. Add nutmeg, oregano…

5. Place filling at the tip of the aubergine slice and then roll to close it.

6. Cover the rolls with the white sauce and that’s it!

If the filling and the white sauce are hot, you don’t need to cook rolls because they’ll be at the right temperature if you’re going to eat them right away. If you want to prepare it and then eat it later, just grill them in the oven for some minutes. The filling may vary depending on your favourite ingredients or those you have on hand. Now that I think about it, there are so many tasty combinations: veggies, ricotta cheese and spinachs, mushrooms, chestnuts…this recipe will taste like heaven no matter what you use to prepare it! So, as I always tell you, use your imagination and you’ll get the perfect recipe! Enjoy!!!
