Boliñas de botelo e San Simón

Desta vez, unha receita de Entroido salgada, que de larpeiradas xa imos ben servidos coas filloas e a Bica! 🙂 Para todos aos que vos guste o botelo ou que devecedes polas croquetas de cocido, de seguro que estas vos encantan! Teñen un sabor intenso a botelo e suave a queixo San Simón…boísimas! Imos ver como se fan!

Ingredientes:

– 100 gramos de botelo sen oso e picado
– 60 gramos de queixo San Simón relado (ou outro queixo cremoso que vos guste)
– bechamel (receita aquí)
– fariña, ovo e pan relado

Preparación paso a paso:

1. Fritimos un chisco o botelo e reservámolo.

2. Preparamos a bechamel e engadimos o queixo relado. Remexeremos ata que vexamos que o queixo comeza a derreterse e integrarse coa bechamel.

3. Engadimos o botelo, mesturamos ben e vertemos nun molde para que arrefrie.

4. Formamos boliñas e pasámolas por fariña, ovo e pan relado.

5. Fritimos as boliñas, sendo mellor facelo de poucas en poucas para que se fagan ben e non arrefríe o aceite.

6. Deixarémolas un pouco sobre papel de cociña para que non teñan aceite demáis e listo!!! A comer!

Botelo and San Simon croquettes

Another Carnival recipe! This time, one you can prepare as either a snack or a first dish! Remember you can have a look at the sweet ones: Filloas and Bica. Botelo (or Botillo) is quite popular in Carnival time in Galiza, it’s somehow similar to chorizo, but the main ingredient are the pork ribs, with the bone. And it’s very tasty! If you have the opportunity of trying it or even buying it, you can prepare these delicious croquettes! Yummy!!!

Ingredients:

– 100 gr chopped botelo with no bones
– 60 gr San Simon cheese (or any other creamy cheese you like)
– white sauce or bechamel (recipe here)
– flour, egg and bread crumbs

Step by step preparation:

1. Fry the chopped botelo for a while and keep for later.

2. Prepare the white sauce and add the cheese. Stir for a while until the cheese is almost completely melted.

3. Add the botelo and mix well. Pour the mixture over a mould and let it cool.

4. When cool and ready, form little balls and coat them in flour, egg and bread crumbs.

5. Fry the croquettes. Better if you do it bit by bit, thus, the oil will not get cold.

6. Take them out and put them over a paper towel to absorb the excess oil. And that’s it!
